A tribute to balance and harmony, Équilibre celebrates nature’s finest ingredients and the poetry of the forest, from white truffle and smoked vanilla to cardamom, verbena, and citrus. Each sequence reveals how the chefs’ distinct philosophies intertwine: Bartocetti’s geometric precision and devotion to purity of produce meet Lambert’s art of contrast and restraint.
Launching on Friday, November 7, 2025, the Lambert X Bartocetti Équilibre Afternoon Tea at Shai Salon transforms forest-inspired seasonal ingredients into a story of texture, fragrance, and terroir, where French haute pâtisserie finds its modern echo in Dubai.
The journey begins with a welcome drink of Darjeeling Sparkling Tea, a delicate refreshment to awaken the palate. The Savoury Selection follows, composed of refined bites including the Lobster Roll in toasted brioche served with bisque and watercress mayonnaise, Arancini di Tapioca with golden crisps, filled with Parmesan cream and lime zest, and a Tartelette Mimosa à la Truffe, with silken egg and white truffle, encased in a buttery pastry.
A Pre-Dessert of Raviole Chocolate and Gingembre bridges savoury and sweet, with cacao pasta enveloping warm ginger ganache, shiso and citrus gel.
The Main Sweets are the highlight of Équilibre, embodying the balance between tradition and modernity. The Paris–Brest Cazette Vanille combines hazelnut praliné with bourbon and Tahitian vanilla, the Tarte Bourdaloue complements poached pear with almond and green cardamom cream.
The Tarte Chocolate and Vanilla Fumée layers Cuban and Madagascan chocolate with smoked vanilla praline, while the Charlotte Framboise and Verveine and Baba Citron, Menthe and Basilic bring lightness to the finale. The journey concludes with the warmth of Fougasse Sucrée aux Agrumes, a citrus-laced brioche finished with olive oil.
